Chicken Recipes - Stir-Fried Chicken

Ingredients

  • 1kg (2 lb ) chicken pieces

  • 1/4 cup peanut oil

  • salt and black pepper

  • 1 medium onion, thinly sliced

  • 1 large fresh red chili, seeded and sliced

  • 2 tbsp chopped fresh coriander

  • 2 tbsp chopped roasted peanuts


Method:

  1. Cut the chicken into bite-sized pieces and sauté in the oil over moderately high heat for about 7 minutes.

  2. Season with salt and pepper, add the onion and chili and continue cooking until the chicken is tender.

  3. Serve garnished with the coriander and peanuts.
