Duck Recipes - Deep-Fried Duck With Plum Sauce

Ingredients

  • 1/2 duck (about 1kg/2lb)

  • salt and white pepper

  • corn-flour (cornstarch) or water chestnut flour

  • deep-frying oil

  • 3/4 cup chicken stock

  • 3 tbsp prepared plum sauce

  • 1/3 - 1/2 tsp chili sauce


Method:

  1. Cut the dish into serving pieces and season with salt and pepper. Coat thickly with flour and fry in the hot oil for about 7 minutes until cooked through and very crisp on the surface.

  2. Drain and arrange on a plate. Bring the chicken stock to boil and stir in the sauces. Simmer briefly, thicken with 1 teaspoon corn-flour (cornstarch) mixed in a little cold water, bring to the boil.

  3. Pour over the duck and serve at once.
