Recipes - Deep-Fried Duck With Plum Sauce
Ingredients

duck (about 1kg/2lb)

salt and white pepper

corn-flour (cornstarch) or water chestnut flour
-
deep-frying oil
-
3/4
cup chicken stock
-
3
tbsp prepared plum sauce

1/3
- 1/2 tsp chili sauce
Method:

Cut the dish into
serving pieces and season with salt and pepper. Coat
thickly with flour and fry in the hot oil for about
7 minutes until cooked through and very crisp on the
surface.

Drain and arrange
on a plate. Bring the chicken stock to boil and stir
in the sauces. Simmer briefly, thicken with 1
teaspoon corn-flour (cornstarch) mixed in a little
cold water, bring to the boil.

Pour over the
duck and serve at once.
