Desserts Recipes - Coconut Red Bean Iced Dessert

Ingredients

  • 0.5 cup red (adzuki) beans

  • 2 tbsp sugar

  • 3/4 cup green and yellow bean jelly beads

  • 0.5 cup dried lotus petals (optional)

  •  crushed ice

  • 0.5 cup of thick coconut milk

  • 3/4 cup sugar syrup

  • 2 cups of thin coconut milk


Method:

  1. Place the beans in a saucepan with sugar and add cold eater to cover generously. Bring to the boil and simmer until tender, drain and cool. Prepare jelly beads.

  2. Boil lotus petals in lightly salted water until tender, drain and cool. To assemble the dessert, spoon a portion of the red beans, jelly beads and lotus petals into tall glasses over crushed ice.

  3. Add a little thick coconut milk and sugar syrup. Top up the glasses with thin coconut milk. Serve with long-handled spoons.
