Desserts Recipes - Jelly Beads

Ingredients

  • 60g (2 oz) mug bean flour (available from Asian/Malay-Indonesian food stockiest)

  • 1 1/3 cup water

  • green and yellow food coloring


Method:

  1. In a small saucepan, mix the flour and water and cook very slowly, stirring to prevent lumps forming, until thick.

  2. Divide into two portions and add the food coloring. Push the paste through a coarse strainer held over a dish of iced water.

  3. The paste will break into small beads. Alternatively, pour into separate dishes and leave to set, then put into small bowls.
