Noodles And Rice Recipes - Assorted Meat Noodles in Soup

Ingredients

  • 180g (6 oz) pork belly

  • 1 chicken breast (about 125g/4 oz)

  • 90g (3 oz) pork or calves liver

  • 2 medium squid

  • 12 medium prawns in their shells

  • 125g (4 oz) thin rice sticks or vermicelli

  • 1 medium onion

  • 2 tbsp vegetable oil

  • 8 cups chicken or pork stock

  • 2 spring onions, finely chopped

  • 1 tbsp chopped fresh coriander

  • 2 tbsp crushed roasted peanuts

  • fish sauce


Method:

  1. Boil the pork belly in lightly salted water until tender, adding the chicken breast when the pork is almost done. Remove and cut into paper thin slices.

  2. Cut the liver into thin slices and the squid into shreds. Place liver, squid and prawns in the stock and simmer for 6-7 minutes. Strain. Soak the noodles in hot water to soften, then bring just to the boil and drain.

  3. Thinly slice the onion and fry in the oil until crisp. Heat the stock and add the meats, warm through then divide between six deep bowls.

  4. Add the fried and spring onions and coriander, then sprinkle on peanuts and fish sauce to taste.
