Ingredients

500g (1lb) topside steak

tbsp fish sauce (nuoc mam)

tbsp dark soy sauce

tbsp sugar

tsp bicarbonate of soda

500g )1 lb) rice vermicelli

tbsp peanut oil

medium onion

medium cucumber, seeded and thinly sliced

tbsp roasted peanuts, chopped

red chili, seeded and chopped

Vietnamese sauce dip (nuoc cham)

cup pickled carrot

(3 oz) fresh bean sprouts

fish sauce
-
sugar (optional)
Method:
-
Very thinly slice
the steak. In a wide dish mix the fish and soy sauce
with sugar and soda. Add the steak, stir well and
set aside for 40 minutes to tenderize.

Soak the
vermicelli in cold water to soften. Drain and drop
into boiling lightly salted water for 1 minute.
Drain.

Thinly slice the
onion and fry in the oil in a wok unit well colored,
remove. Drain the meat and fry in the remaining oil
until lightly cooked, add the reserved marinade.

Arrange beef and
onions on the vermicelli and serve with the sauce
dip and remaining ingredients arranged on another
plate.
