Noodles And Rice Recipes - Fried Rice With Crabmeat

Ingredients

  • 2 cups long grain white rice

  • 2 spring onions, finely chopped (whites and greens separated)

  • 2 eggs, beaten

  • 2 tbsp peanut or vegetable oil

  • 150g (5 oz) crabmeat

  • 90g (3 oz) fresh bean sprouts

  • salt and white pepper


Method:

  1. Cook the rice with just over 3 cups cold water in a tightly covered pan until tender. Sauté the whites of onion in the oil until softened and remove.

  2. Pour in the beaten egg and cook gently, breaking up with a spatula. Remove. Add the cooked rice and stir in the remainder of the oil until evenly coated with oil.

  3. Add the crabmeat and bean sprouts, return the onions and egg and season to taste with salt and pepper. If liked, add a little fish sauce or lightly soy sauce.

  4. Pile into a serving dish and garnish with the chopped spring onion greens.
