Simmered In Vinegar Sauce
Ingredients
600g (10 oz) beef fillet or rump

1/2 tsp cracked black pepper
STOCK:
3/4
cup white vinegar
5
cups water
3
large cloves garlic, mashed
2
large, very ripe tomatoes, chopped
fish sauce (nuoc mam)
SAUCE:
2
tsp Chinese prawn sauce
1
small red chili, seeded and chopped
lime juice
2
cups chopped Chinese white cabbage
cooked white rice
Method:
Very thinly slice
the beef (this is done easiest by partially freezing
the meat before slicing). Arrange on several plates
and season with pepper.
In a saucepan mix
the vinegar, water, garlic and tomatoes. Bring to
the boil and simmer for 10 minutes, then strain and
transfer to a tabletop hotpot or saucepan/wok or
over a tabletop cooker. Add fish sauce to taste.
Make a sauce by
mixing the prawn sauce with a little fish sauce, the
mashed chili, sugar and lime juice to taste, thinned
with water. Pour into a small dish for each diner.
Add beef to the
stock to simmer until lightly done. Dip into the
sauce and eat with rice. When the meat is done, cook
the cabbage and eat with remaining rice.
