Pork And Beef Recipes - Lemon Grass Beef

Ingredients

  • 1 kg (2 lb) stewing/braising beef

  • 1/2 cup vegetable oil

  • 3 large cloves garlic, mashed

  • 2 stalks lemon grass

  • 4 thick slices ginger

  • 2 tbsp fish sauce (nuoc mam)

  • slat and black pepper

  • 2 tsp mild curry powder

  • 1 cup thin coconut milk

  • fresh coriander


Method:

  1. Cut meat into large cubes and brown in the oil. Lightly cook the garlic when the meat is done. Cut the lemon grass in halves lengthwise, discarding the green tops.

  2. Place beef in a saucepan or casserole with the garlic, lemon grass, ginger and fish sauce. Cover with warm water and bring to the boil.

  3. Simmer gently on top of the stove or in the oven for about 1 1/4 hours. Add salt and pepper to taste, discard the lemon grass and ginger and add the curry powder and coconut milk. Simmer until the meat is completely tender.

  4. Check seasoning, add coriander and serve with white rice.
