Ingredients
500g (1 lb) piece boneless pork, leg or shoulder
1
1/2 tbsp brown sugar
1/3
cup water
2
tbsp fish sauce
1/2
tsp white pepper
1
1/2 cups thin coconut milk
Method:
Trim excess fat
from pork and place whole pieces in a large saucepan
with enough water to cover. Bring to the boil and
cook for 45 minutes. Lift out and drain well. Cool,
then slice thinly.
Combine sugar and
water in a saucepan and bring to the boil. When
sticky put in slices of pork and coat each with the
syrup. Splash on fish sauté and season with white
pepper.
Pour in coconut
milk, cover and simmer on moderate heat until pork
is tender and sauce thick and creamy.
