Deep-Fried Honey Pork
Ingredients
600g (20 oz) belly (five flowered) pork
1
tbsp light soy or fish sauce
large pinch five spice powder
pinch of chili powder
salt and white pepper

cup corn-flour (cornstarch)
3
egg whites
deep-frying oil
30g
(1 oz) rice vermicelli
1/3
cup clear honey
2
tsp white sesame seeds
Method:
Cut the pork into
bite-sized cubes and place in a dish with the soy
sauce or fish sauce, five spice and chili powders,
salt and pepper and marinate for 40 minutes.
Heat deep-frying
oil and when it reaches smoking point, drop in the
vermicelli to cook for 5 seconds until wee expanded
and white. Remove. Spread the vermicelli on a
serving plate and pile the pork on top.
Make a thick
batter with corn-flour (cornstarch) and water. Beat
egg whites to peaks, fold into the batter. Coat the
pork with batter and deep-fry for abut 7
minutes until well cooked and very crisp. Drain.
Transfer about 2
tablespoons oil to another pan and ad the horny,
heat to boiling and pour over the pork. Sprinkle on
sesame seeds and serve at once.
