Recipes - Steak With Black Bean Sauce
Ingredients
250g (8 oz) rump or fillet steak

tbsp vegetable oil

1/2 tbsp light soy sauce
1
tsp sugar
1
tbsp corn-flour (cornstarch)

medium onion
2
spring onions, chopped (white and greed separated)
1
clove garlic, finely chopped
2
tsp sesame oil
3
tsp fermented black beans, chopped
Method:
Very thinly slice
the steak against the grain and place in a dish.
Sprinkle on half the oil, soy, sugar and corn-flour
(cornstarch) and mix well. Leave for 30 minutes.
Heat remaining oil in a wok or heavy pan and
stir-fry the steak over high heat for 1 minute.
Remove.
Peel the onion
and cut into thin slices, cutting from top to base,
separate the layers. Stir-fry in the same pan until
the onions begin to soften, then remove.
Add the spring
onions whites and the remaining ingredients and stir
over high heat for 1 minute. Return the meat and
onion and cook together briefly.
Mix the remaining
corn-flour (cornstarch) with 1/2 cup water and pour
into the pan, adding remaining soy sauce and sugar.
Stir on high heat until the sauce thickens. Serve
garnished with the spring onion greens.
