Pork And Beef Recipes - Steak With Black Bean Sauce

Ingredients

  • 250g (8 oz) rump or fillet steak

  • 3 tbsp vegetable oil

  • 1 1/2 tbsp light soy sauce

  • 1 tsp sugar

  • 1 tbsp corn-flour (cornstarch)

  • 1 medium onion

  • 2 spring onions, chopped (white and greed separated)

  • 1 clove garlic, finely chopped

  • 2 tsp sesame oil

  • 3 tsp fermented black beans, chopped


Method:

  1. Very thinly slice the steak against the grain and place in a dish. Sprinkle on half the oil, soy, sugar and corn-flour (cornstarch) and mix well. Leave for 30 minutes. Heat remaining oil in a wok or heavy pan and stir-fry the steak over high heat for 1 minute. Remove.

  2. Peel the onion and cut into thin slices, cutting from top to base, separate the layers. Stir-fry in the same pan until the onions begin to soften, then remove.

  3. Add the spring onions whites and the remaining ingredients and stir over high heat for 1 minute. Return the meat and onion and cook together briefly.

  4. Mix the remaining corn-flour (cornstarch) with 1/2 cup water and pour into the pan, adding remaining soy sauce and sugar. Stir on high heat until the sauce thickens. Serve garnished with the spring onion greens.
