Pork And Beef Recipes - Steak With Oyster Sauce

Ingredients

  • 350g (12 oz) rump or fillet steak

  • 1 tbsp light soy sauce

  • 1 tsp sugar

  • pinch of white pepper

  • 1 tbsp corn-flour (cornstarch)

  • 3 tbsp vegetable oil

  • 1 medium onion

  • 1 small carrot, thinly sliced

  • 1/2 celery stick, thinly sliced

  • 4 straw mushrooms, sliced

  • 30g (1 oz) sliced bamboo shoots

  • 1 1/2 tbsp oyster sauce


Method:

  1. Very thinly slice the steak and place in a dish. Sprinkle on the soy sauce, sugar and pepper and add half the corn-flour and oil. Mix well and marinate for 1 hour.

  2. Heat the remaining oil in a wok or heavy pan. Peel the onion and slice from top to base, separating the pieces. Stir-fry onion, carrot and celery in the hot oil for 1 minute. Push to one side of the pan and stir-fry the beef until lightly cooked.

  3. Add the mushrooms and bamboo shoots and cook briefly. Mix the remaining corn-flour into a half cup of water and pour into the pan. Bring to the boil, add oyster sauce, stir in and serve.
