Steak With Oyster Sauce
Ingredients

350g (12 oz) rump or fillet steak

tbsp light soy sauce

tsp sugar

pinch of white pepper

tbsp corn-flour (cornstarch)

tbsp vegetable oil

medium onion
-
1
small carrot, thinly sliced

1/2
celery stick, thinly sliced

straw mushrooms, sliced

30g
(1 oz) sliced bamboo shoots

1/2 tbsp oyster sauce
Method:
-
Very thinly slice
the steak and place in a dish. Sprinkle on the soy
sauce, sugar and pepper and add half the corn-flour
and oil. Mix well and marinate for 1 hour.

Heat the
remaining oil in a wok or heavy pan. Peel the onion
and slice from top to base, separating the pieces.
Stir-fry onion, carrot and celery in the hot oil for
1 minute. Push to one side of the pan and stir-fry
the beef until lightly cooked.

Add the mushrooms
and bamboo shoots and cook briefly. Mix the
remaining corn-flour into a half cup of water and
pour into the pan. Bring to the boil, add oyster
sauce, stir in and serve.
