Ingredients
500g (1 lb) beef steak (chuck, round, topside)
375g (3/4 lb) shin beef or flank

tbsp mint leaves, chopped

tbsp fish sauce
2
tsp sugar
1/2
tsp white pepper

tbsp vegetable oil
5
cm (2 inch) piece fresh ginger, thinly sliced
1
tbsp mild curry powder
4
1/2 cups water
spring onion or shallots, shredded
Method:
Cut beef and
shin, or flank, into pieces about 5 cm (2 inches)
square. Season with chopped mint, fish sauce, sugar
and pepper and marinate for 30 minutes, turning
occasionally.
Heat oil in a
large saucepan and fry meat until well browned. add
ginger and furry powder. Sauté for 3-4 minutes. Pour
in water and bring to the boil. Cover, turn heat
down and simmer for about 2 hours until meat is very
tender.
