Sauces And Appetizers Recipes - Beef And Rice Paper Rolls

Ingredients

  • 500g (1lb) beef fillet

  • 3 tbsp minced lemon grass root

  • 3 tbsp minced spring onion (white part only)

  • 2 tsp crushed garlic

  • 3 tsp brown sugar

  • 1 1/2 tbsp fish sauce (nuoc mam)

  • 1 1/2 tbsp sesame oil

  • 24 small thin rice paper wrappers

  • 2 tsp toasted sesame seeds

  • chopped spring onion greens

  • chopped fresh coriander leaves

  • peanut sauce (nuoc leo)


Method:

  1. Make a paste of the lemon grass, spring onion, garlic, sugar, fish sauce and sesame oil and spread thickly over the beef. Set aside for 2 hours, then roast in a very hot over for 25 minutes. Slice the beef very thinly.

  2. Brush the wrappers with cold water to soften. Place a slice of beef on each and garnish with sesame seeds, spring onions and coriander. Roll up into cylinders and serve on a bed of lettuce with the peanut sauce for dipping.
