Ingredients

500g (1lb) beef fillet

tbsp minced lemon grass root
-

tbsp minced spring onion (white part only)

tsp crushed garlic
-
3
tsp brown sugar
-

1/2 tbsp fish sauce (nuoc mam)

1/2 tbsp sesame oil

small thin rice paper wrappers
-

tsp toasted sesame seeds

chopped spring onion greens
-
chopped fresh coriander leaves
-
peanut sauce (nuoc leo)
Method:
-
Make a paste of
the lemon grass, spring onion, garlic, sugar, fish
sauce and sesame oil and spread thickly over the
beef. Set aside for 2 hours, then roast in a very
hot over for 25 minutes. Slice the beef very thinly.

Brush the
wrappers with cold water to soften. Place a slice of
beef on each and garnish with sesame seeds, spring
onions and coriander. Roll up into cylinders and
serve on a bed of lettuce with the peanut sauce for
dipping.
