Ingredients

small very ripe mangoes
-
4
fresh red or green chilies, thinly sliced

shallots or 3 small red onions, thinly sliced

tbsp fish sauce
-
3
tbsp sugar
-
2
tbsp dried fish or shrimps, ground

tsp salt
Method:
-
Peel mangoes,
remove stones and slice into thin strips. Put
mangoes, chilies, onions and seasonings into a
saucepan and cook on low heat, stirring frequently,
for 15 minutes.

Add a little
water when chutney begins to dry up.
-
Spoon into
wide-necked jars, seal and put into a dark cupboard
to mature for 5-6 days before using.
