Sauces And Appetizers Recipes - Mango Chutney (Nuoc Nam Me)

Ingredients

  • 6 small very ripe mangoes

  • 4 fresh red or green chilies, thinly sliced

  • 10 shallots or 3 small red onions, thinly sliced

  • 4 tbsp fish sauce

  • 3 tbsp sugar

  • 2 tbsp dried fish or shrimps, ground

  • 3 tsp salt


Method:

  1. Peel mangoes, remove stones and slice into thin strips. Put mangoes, chilies, onions and seasonings into a saucepan and cook on low heat, stirring frequently, for 15 minutes.

  2. Add a little water when chutney begins to dry up.

  3. Spoon into wide-necked jars, seal and put into a dark cupboard to mature for 5-6 days before using.
