Pork with Rice Sticks in Coconut Sauce
Ingredients
500g (1lb) finely minced fat pork

spring onions

tbsp fish sauce
1
tsp sugar
salt and pepper
3
tbsp chopped fresh coriander
2
tbsp vegetable oil
60g
(2oz) fine rice stick noodles
2
cups thick coconut milk
2
slices fresh ginger, shredded
1
fresh red chili, seeded and shredded

tbsp fish sauce
salt and pepper

lettuce leaves, shredded

(3oz) fresh bean sprouts, rinsed
pickled carrot, optional
Method:
Place the pork in
a mixing bowl. Very finely chop half the spring
onions and add to the pork with sauce, sugar, salt
and pepper and half the coriander.
Mix to a smooth
paste and form into sausage shapes. Place on an
oiled plate and steam over simmering water for 10
minutes. Drain and pat with paper towels.
Heat the oil in a
flat pan and fry the pork to color the surface. Drop
the noodles into simmering, lightly salted water to
soften, drain.
In a saucepan
simmer the coconut milk with ginger, chili, fish
sauce, sat and pepper for 5 minutes. on moderate
heat. Divide the noodles between bowls and pour on
the coconut sauce.
Slice the pork
and place on the top with shredded lettuce, bean
sprouts, pickled carrot and the remaining spring
onions and coriander.
