Ingredients

French baguette
350g (8oz) prawn meat
1
small clove garlic, mashed
1
small spring onion, very finely chopped
1
tbsp flour
1
tbsp corn-flour (cornstarch)
1
egg white, well beaten
salt and pepper
deep-frying oil
Method:
Thinly slice the
bread. In a mortar or food processor make a paste of
the prawn meat with garlic, spring onion, the
flours, egg white and seasonings.
Add a little
water to make the mixture smooth and light. Spread
over one side of the bread, smoothing and rounding
at the edges.
Heat deep oil and
slide in the prawn toast, filled sides downwards,
several pieces at a time to cook until golden. Drain
well and serve with a dip of lightly soy sauce or
Vietnamese sauce dip.
