Sauces And Appetizers Recipes - Salted Jellyfish With Vegetables And Meat

Ingredients

  • 125g (4oz) salted jellyfish

  • 12 medium prawns in the shell

  • 180g (6oz) roast pork, shredded

  • 1 small cucumber, shredded

  • 1 small carrot, shredded

  • 1/2 celery stick, shredded

  • fresh coriander sprigs

DRESSING

  • 2 tbsp fish sauce (nuoc mam)

  • 1 tbsp lime juice

  • 1 tbsp water

  • 2 tsp finely chopped roasted peanuts

  • 1/4 red chili, finely chopped


Method:

  1. Soak the jellyfish in cold water for about 2 1/2 hours, changing the water twice. Drain and cut into shreds.

  2. Drop the prawns into boiling water to cook, then drain, peel and cut in halves.

  3. In a mixing bowl, toss the ingredients together, pour on the dressing and mix well, then serve garnished with fresh coriander.
