Seafood Recipes - Fried Prawns With Green Onion (Tom Kho
Tau)
Ingredients

spring onions
375g (3/4 lb) raw prawns
3
tbsp oil
1
tbsp fish sauce
2
tsp sugar
1
lettuce
mint sprigs
Method:
Chop spring
onions into 4 cm (1 1/2 inch) pieces. Peel and
devein prawns, leaving heads and tail fins intact,
if preferred. Wash and pat dry. With a small
sharp knife make deep incisions down the backs of
prawns which will make them curl during cooking.
Heat oil in a
large frying-pan and fry prawns and spring onions
for 3-4 minutes. Splash on fish sauce. Add sugar and
stir on moderate heat for another 2 minutes.
Shred lettuce or
wipe leaves. Arrange in a serving dish. Top with
cooked prawns and garnish with sprigs of mint.
