Salt And Pepper Crabs
Ingredients

medium raw crabs
2
tbsp sea salt
3
tbsp vegetable oil
8
cloves garlic, crushed
6
spring onions, chopped
3
tsp black peppercorns, slightly crushed
fresh red and green chili, shredded
fresh coriander sprigs
Method:
Crack undersell
of crabs and scoop out inedible parts. Wash and
drain, then using a heavy knife or cleaver cut each
crab into about 4 pieces, leaving legs and claws
attached.
Put crabs in a
large saucepan and cover with cold salted water, and
leave to stand for 30 minutes. Drain crabs, rinse
with cold water, drain again and allow to dry.
Heat toil in a
large pan and fry crushed garlic for 2 minutes. Add
crabs and sauté for 5-6 minutes. Add spring onions
to the pan with peppercorns and a little sea salt.
Continue to sauté
until crabs are cooked through, adding a very little
water to keep meat moist.
Serve garnished
with shredded chili and coriander sprigs.
