Seafood Recipes - Salt And Pepper Crabs

Ingredients

  • 6 medium raw crabs

  • 2 tbsp sea salt

  • 3 tbsp vegetable oil

  • 8 cloves garlic, crushed

  • 6 spring onions, chopped

  • 3 tsp black peppercorns, slightly crushed

  • fresh red and green chili, shredded

  • fresh coriander sprigs


Method:

  1. Crack undersell of crabs and scoop out inedible parts. Wash and drain, then using a heavy knife or cleaver cut each crab into about 4 pieces, leaving legs and claws attached.

  2. Put crabs in a large saucepan and cover with cold salted water, and leave to stand for 30 minutes. Drain crabs, rinse with cold water, drain again and allow to dry.

  3. Heat toil in a large pan and fry crushed garlic for 2 minutes. Add crabs and sauté for 5-6 minutes. Add spring onions to the pan with peppercorns and a little sea salt.

  4. Continue to sauté until crabs are cooked through, adding a very little water to keep meat moist.

  5. Serve garnished with shredded chili and coriander sprigs.
