fresh sea scallops with coral

tbsp vegetable oil

thick slices ginger, shredded
30g
(1oz) canned sliced bamboo shoots

small carrot, sliced

small onion, sliced

straw mushrooms, sliced
3
small broccoli flowerets

tbsp fish sauce

cup chicken stock
2
tsp corn-flour (cornstarch)
salt and pepper
Method:
In a large pan or
wok stir-fry the scallops with ginger in the oil
until they change color. Remove. Add the vegetables
and stir-fry for 2-3 minutes. Return the scallops
and fry briefly.
Add the fish
sauce and chicken stock mixed with corn-flour
(cornstarch). Add salt and pepper to taste and stir
until the sauce thickens.
