Seafood Recipes - Scallops With Vegetables (Deip Xao Rau Cai)

Ingredients

  • 12 fresh sea scallops with coral

  • 3 tbsp vegetable oil

  • 3 thick slices ginger, shredded

  • 30g (1oz) canned sliced bamboo shoots

  • 1 small carrot, sliced

  • 1 small onion, sliced

  • 3 straw mushrooms, sliced

  • 3 small broccoli flowerets

  • 1 tbsp fish sauce

  • 1/2 cup chicken stock

  • 2 tsp corn-flour (cornstarch)

  • salt and pepper


Method:

  1. In a large pan or wok stir-fry the scallops with ginger in the oil until they change color. Remove. Add the vegetables and stir-fry for 2-3 minutes. Return the scallops and fry briefly.

  2. Add the fish sauce and chicken stock mixed with corn-flour (cornstarch). Add salt and pepper to taste and stir until the sauce thickens.
