Seafood Recipes - Sliced Fish With Satay Sauce (Ca Xao Xa Tay)

Ingredients

  • 500g (1lb) white fish fillets

  • corn-flour (cornstarch)

  • 3 cups deep-frying oil

  • 1/2 medium onion

  • 1/2 carrot, sliced

  • 4 small broccoli flowerets

  • 2 tbsp bottled satay sauce


Method:

  1. Cut across the fish fillets making 2 cm (3/4 inch) sticks. Coat lightly with corn-flour (cornstarch) and fry in the oil until lightly golden, remove, drain off the oil and wipe out the pan.

  2. Return 2 tablespoons of the oil and heat. Cut the onion into slices from top to base, separate the pieces. Stir-fry onion, carrot and broccoli in the oil for 2 minutes, add the satay sauce and stir until smooth and well heated.

  3. Return the fish and heat carefully in the sauce then serve immediately.
