Soups And Steamboat Recipes - Asparagus And Crabmeat Soup

Ingredients

  • 4 1/2 cups chicken or fish stock

  • 2 tsp fish sauce

  • 1/4 tsp white pepper

  • 9 spears canned asparagus, drained

  • 185g (6 oz) shredded crab meat

  • 3 eggs whites

  • 2 spring onions, chopped

  • fresh red and green chili, shredded


Method:

  1. Bring stock to the boil, season with fish sauce and white pepper. Cut asparagus into 6 cm (2 1/2 inch) pieces, and add to the stock with crab meat.

  2. Simmer on low heat for 2 minutes. Beat egg whites lightly and stir into the soup. The egg should form white threads in the soup. Cook for another minute.

  3. Garnish with chopped spring onion and shredded chili.
