Ingredients

(3 1/2 oz) lean pork, sliced
fish sauce
salt and white pepper

medium prawns, peeled
375g (12 oz) white fish fillets, sliced

fresh squid, cleaned and sliced
100g (3 1/2 oz) chicken breast, sliced

Chinese white cabbage, chopped
2
spring onions, chopped
100g (3 1/2 oz) rice stick noodles, soaked
white vinegar
sauces for dipping
Method:
Place the pork in
a dish and season with salt, pepper and fish sauce,
set aside for 20 minutes. Arrange the seafood,
sliced meats, vegetables and noodles on separate
plates.
In a steamboat or
other improvised tabletop cooker bring about 8 cups
water to a slow boil. Add a small splash of vinegar,
salt and pepper.
Each guest cooks
a personal choice of the ingredients, dipping them
into the provided sauces.
