Soups And Steamboat Recipes - Rice Soup With Prawns

Ingredients

  • 1 1/4 cups broken rice

  • 2 tbsp vegetable oil

  • 2 cloves garlic, chopped

  • 375g (12 oz) prawn meat, chopped

  • 2 spring onions, chopped (whites and green separated)

  • 1 slice ginger, shredded

  • 10 cups chicken stock or water

  • fish sauce

  • chopped fresh coriander


Method:

  1. If broken rice is not available, use short or long-grain white rice and crack in a blender. Place in a large saucepan. Sauté the garlic in the oil until well colored, add the prawn meat and sauté briefly.

  2. Add to the rice with the white parts of spring onion, the ginger, stock and 2 tablespoons fish sauce. Add salt and pepper and bring to the boil. Simmer until the rice is very tender, about 20 minutes.

  3. Add extra fish sauce to taste and the reserved spring onion greens with coriander. Serve in deep bowls.
