Soups And Steamboat Recipes - Tomato And Seafood Soup

Ingredients

  • 12 large prawns, in the shell

  • 2 fresh squid, cleaned and rinsed

  • 3 medium ripe tomatoes

  • 125g (4 oz) fresh bean sprouts

  • 2 spring onions, chopped

  • mint or fresh coriander leaves

  • fish sauce (nuoc mam)

  • pepper


Method:

  1. Peel the prawns and place the heads and shells in a saucepan with 7 cups of water. Bring gently to the boil and simmer for 10 minutes, strain and set aside.

  2. Devine the prawns and slit deeply down the centre backs so they curl when cooked. Cut the squid into narrow strips or rings. Cut in tomatoes into wedges.

  3. Top and tail the bean sprouts. Reheat the prawn stock, adding fish sauce to taste. Drop in the tomatoes and simmer for 2 minutes, then add the remaining ingredients and cook gently until tender.

  4. Check seasoning adding salt, if needed, pepper and additional fish sauce.
