Vegetables And Salad Recipes - Carrot Pickle

Ingredients

  • 1 medium carrot

  • 2 tsp sugar

  • 1 tsp salt

  • 1 tbsp white vinegar


Method:

  1. Peel the carrot and cut into 5 cm (2 inch) lengths. Slice thinly. Stack the slices and cut across them to make fine shreds.

  2. Mix the remaining ingredients with 3 tablespoons water, add the carrot and marinate for 20 minutes. Knead gently with the fingers to soften the carrots, then drain.
