Carrot Pickle
Ingredients

medium carrot
2
tsp sugar
1
tsp salt
1
tbsp white vinegar
Method:
Peel the carrot
and cut into 5 cm (2 inch) lengths. Slice thinly.
Stack the slices and cut across them to make fine
shreds.
Mix the remaining
ingredients with 3 tablespoons water, add the carrot
and marinate for 20 minutes. Knead gently with the
fingers to soften the carrots, then drain.
